This could not be easier to prepare, and makes a lovely offering on the breakfast bar. Alternately layering a good quality yogurt with granola (preferably homemade), and seasonal fruit and berries, in a beautiful stemless wine glass or an old-fashioned parfait glass is sure to please. These breakfast parfaits can be assembled a couple of hours ahead of serving and refrigerated until you need them. Be sure when serving, to have your parfait placed on a small plate so that there is a place to rest the spoon between bites. A garnish of a fresh mint sprig will make each picture-perfect.
Breakfast Parfaits
Ingredients
- 1 Cup Homemade Granola see previous recipe
- 3 Cups Plain Yogurt I prefer the Fage brand from Central Market
- 2-3 Cups Sweetened fresh seasonal fruit or berries
Instructions
- To assemble: In parfait glasses or wine glasses, spoon in ¼ cup yogurt, 2 Tbsp granola, then top with some fruit. Repeat layers. These can be assembled 2 hours ahead, and stored in the refrigerator until serving time. Garnish with a mint leaf if desired.
